Harvest

Our Estate Coffees are normally harvested between the months of May and September of each year, depending on the seasonal weather patterns and the ripeness of the cherries. In some cases the cherries will be harvested in three or four passes as the fruits ripen during this period.

All of our cherries are hand picked, one by one, by our permanent staff of specially trained workers. All of our workers are certified tasters and participate in the cupping of our coffees throughout the harvest.

Once selected, our cherries are rested for a period of time to allow the flavors of the fruit to be absorbed into the bean. This process enhances the sweet flavor of our coffees and mellows the bitterness and acidity normally associated with most coffees. The cherries are then de-pulped naturally and dried on a suspended terrace inside their own parchment. Each bean is then screened for irregularities and/or imperfections and such defects are eliminated to provide only the highest quality product for our customers.
